Coffee Storage 101

You've sourced beautiful, freshly roasted coffee — now keep it that way. Improper storage is the most common reason premium coffee disappoints. Four enemies destroy coffee flavor: oxygen, moisture, heat, and light. Here is how to defeat all four.

Use an Airtight Container

Oxygen is coffee's number one enemy. Once exposed to air, the volatile aromatic compounds that give coffee its complexity begin to dissipate within hours. Transfer your beans to an airtight container with a one-way CO₂ valve (which lets gas out without letting air in) as soon as you open the original bag. Dark-tinted ceramic or stainless-steel canisters work well.

Room Temperature is Best

Despite popular belief, the refrigerator is a terrible place to store coffee. The fridge is full of moisture and odors that coffee absorbs readily. Daily temperature swings from removing and replacing the container cause condensation to form on and inside the beans, accelerating staling. Store coffee at a consistent room temperature — ideally 60°F–75°F (15°C–24°C).

The Freezer Exception

Freezing coffee is actually acceptable — but only if you do it right. Portion beans into airtight, sealed bags sized for one week's use before freezing. Never return thawed beans to the freezer; the repeated freeze-thaw cycle causes moisture damage. Once a portion is taken out, let it come to room temperature before opening the bag to prevent condensation.

Keep Away From Heat Sources

Do not store coffee above or next to the stove, oven, microwave, or any appliance that generates heat. The kitchen counter near a sunny window is equally bad. Heat accelerates the chemical reactions that degrade flavor. A cupboard or pantry away from appliances is ideal.

Buy Smaller, More Often

The most practical storage tip is simply buying less at a time. A 12 oz bag brewed daily lasts about a week — perfectly within the coffee's peak flavor window. Buying a 5-pound bag to save a few dollars means drinking stale coffee for weeks. With a Sunset Brews subscription, your coffee ships on your schedule so you always have fresh beans arriving right when you need them.
